<h3 class="wp-block-heading" id="h-what-s-your-favourite-dish-to-cook-or-eat-at-christmas-and-why">What’s your favourite dish to cook or eat at Christmas and why?</h3>



<p>For me, my favourite dish to cook at Christmas is a turkey breast ballotine stuffed with &nbsp;sausage meat, bread crumb, sage &amp; chestnut stuffing wrapped in crispy parma ham. served with gravy (made from the roasting pan juices) honey glazed carrots &amp; parsnips, pigs in blankets, sprouts, roasties &amp; of course cranberry sauce&#8230; No Yorky!&nbsp;</p>



<h3 class="wp-block-heading" id="h-are-there-any-festive-ingredients-or-flavour-pairings-you-think-are-underrated">Are there any festive ingredients or flavour pairings you think are underrated?</h3>



<p>I think sprouts are massively underrated and it&#8217;s a shame we only really eat them at Christmas.For me the way I cook sprouts that make them absolutely delicious. I cut them in half raw and in a heavy based pan place them cut side down, few knobs of butter, and lid on the pan (helps them steam) medium heat then a few mins later you have beautifully cooked caramelised sprouts cooked in brown &nbsp;butter that taste completely different to the green mush a lot of us are used to. Can always finish them with some lemon zest, pecorino &amp; of course bacon and then this simple vegetable is now a side dish in itself.</p>



<h3 class="wp-block-heading" id="h-how-do-you-like-to-elevate-a-classic-christmas-dish-without-overcomplicating-it">How do you like to elevate a classic Christmas dish without overcomplicating it?</h3>



<p>⁠For me sometimes there&#8217;s no school like old school. I feel like actually making stuffing and stuffing our turkey is now more of a lost art in the world of premade/bought paxo stuffing.&nbsp;<br>The flavour you get from actually cooking your own stuffing inside your turkey is unbelievable, soaks in all the juices &amp; you can have more fun with your flavour combinations &#8211; smash in some dried cranberries, macadamia nuts, lemon slices ect</p>



<h3 class="wp-block-heading" id="h-what-s-your-favourite-way-to-use-up-christmas-leftovers">What’s your favourite way to use up Christmas leftovers?</h3>



<p>The only thing I do with leftovers are turkey , gravy &amp; home made stuffing buttys the following day.&nbsp;</p>



<h3 class="wp-block-heading" id="h-what-s-one-piece-of-advice-you-d-give-to-help-people-enjoy-the-cooking-not-just-the-meal">What’s one piece of advice you’d give to help people enjoy the cooking, not just the meal?</h3>



<p>⁠I have 2 tips for this!<br>Personally, I would do some prep the day before, you don&#8217;t want to be getting up at 6 am to start peeling potatoes &amp; carrots ect. get your spuds peeled, boiled &amp; fluffed in your fridge the day before ready to be turned into the roasties on the day. I try to make Christmas day as minimal as possible to enjoy the whole experience as much as possible. Your family dont want you in the kitchen all day during Christmas after all!<br>My 2nd tip is to have a glass of wine in hand, at home there&#8217;s nothing more than cooking for my family with a little bit of fleetwood mac playing from my speaker with a glass of red. Also remember Christmas day is also the one day of the year drinking some buck fizz/Mimosa or Champagne for breakfast is socially acceptable, make the most of it!</p>

<p>Preparation! Do as much in advance as you can possibly do! The more you do the easier the day will be and the more time for family and friends and enjoying Christmas!&nbsp;</p>



<h3 class="wp-block-heading" id="h-which-parts-of-a-christmas-menu-can-be-prepared-ahead-to-reduce-stress-on-the-day">Which parts of a Christmas menu can be prepared ahead to reduce stress on the day?</h3>



<p>Most of it can be done in advance, whether it’s part cooking vegetables ready to be finished, the dessert can be fully made, leaving the main event, meat or fish for example, for Christmas Day so you have full focus on it.&nbsp;<br></p>



<h3 class="wp-block-heading" id="h-what-s-the-most-common-christmas-cooking-mistake-you-see-and-how-do-you-avoid-it">What’s the most common Christmas cooking mistake you see and how do you avoid it?</h3>



<p>Overcooking of meat, the easiest way of avoiding this is to make sure you’re taking your meat to the correct temperature and giving it plenty of time to rest before carving.&nbsp;</p>



<h3 class="wp-block-heading" id="h-how-do-you-manage-oven-space-and-timing-when-cooking-multiple-dishes">How do you manage oven space and timing when cooking multiple dishes?</h3>



<p>⁠Preparation, the more you have cooked in advance the less time it will need in the oven, it will just be a case of finishing. Finish as much as you can on the stove in pans and once things come out of the oven use foil to cover to keep the heat in until you’re ready to serve.&nbsp;</p>



<h3 class="wp-block-heading" id="h-what-s-your-go-to-trick-for-achieving-restaurant-quality-flavour-at-home">What’s your go-to trick for achieving restaurant-quality flavour at home?</h3>



<p>If you’re having Turkey for Christmas my trick would be to brine it! This ensures the meat won’t be dry and gives it incredible flavour!&nbsp;</p>
